PS3 will be getting some interesting stuff in the future like White Knight Story and Folklore but you're right, as of now there's no reason to run out and pick one up to play RPG's. Same for the 360 really, the only AAA RPG on shelves is the multiplatform Oblivion.
360 will be getting Mass Effect, Lost Odyssey, Blue Dragon, Two Worlds and Eternal Sonata this year. Also there's some more in the works like Fable 2, Kingdom Under Fire and Infinite Undiscovery (from Tri-Ace, the Star Ocean/Valkyrie Profile developer). For my tastes the 360 has the more diverse and interesting lineup of announced RPG's at the moment.
As far as Squaresoft, who knows what their plans are looking like this generation. The most interesting stuff seems to be coming to the DS, and while PS3 will undoubtedly get some high profile exclusives (FFXIII and Versus) for all we know the Wii will end up being their lead platform in the next few years.
Also a Marvel MMO will be appearing on the 360 eventually while a DC MMO is being made for PS3, but not much info has been shown for either.
Here's a thread from GameTrailers on the subject with all the known titles.
Your best bet now is to keep if you have the PS2, as both 360 and PS3 will be lacking RPGs for the moment, except for Blue Dragon, which is really good, except for the character design which is the same crap Toriyama has been drawing since Dragon Ball back in the early 80s.
As for the later years, PS3 will be the choice, its not hard to figure that. Any developer that wants to make a next gen RPG will go for PS3 since its far more popular than the 360 in Japan. The end results will be like the last gen, PS3 will have most if not practically all the J-RPGs while the 360, as its predecessor will have most if not all of the W-RPGs.
It will all fall under what do you look for on an RPG, do you prefer Final Fantasy or KOTOR? Its simple as that.
Some J-RPGs right now are The Last Remnant, Final Fantasy XIII(PS), Final Fantasy vs XIII(PS), Blue Dragon(360), White Knight Story(PS), Eternal Sonata(360)
Some W-RPGs are Mass Effect, Lost Odyssey, and some others. As I said, this are 360 titles.
