2600 - i would say Pitfall (the one where u swing over swamps with gators in them) but really i havent played a 2600 in years
nes - Punchout! or SMB3
n64 - mario kart 64 or James Bond: Golden Eye
Genesis - NHL 94 (by EA sports) or Sonic 2
Atari 2600- Pitfall 1-2, Keystone Kapers
NES- Super Mario Bros 3, Castlevania series, Mega Man series
N64- Super Mario 64
Genesis- Sonic the Hedgehog 3, Sonic & Knuckles
2600: Never played it, but Pitfall, Solaris and Adventure were its hits. As for Pitfall 2, you're better off with the 5200 version.
NES: Ditto, but the Legend of Zelda, Metroid, Super Mario Bros. 3 look great. The arcade version of Contra (playable on MAME) wipes the floor with the NES for graphics and sound, but far less challenging given that it lets you continue a few times if you die.
Mega Drive/Genesis: Landstalker, Streets of Rage 3, Phantasy Star II, Shining Force II, Ecco the Dolphin, Ristar and Sonic 3 & Knuckles (I'm still amazed to this day how Sonic 3 took advantage of the Mega Drive's hardware). If you get the CD add-on, be sure to get Sonic CD, Shining Force CD and Silpheed.
Nintendo 64: The Legend of Zelda: Ocarina of Time (ABSOLUTELY ESSENTIAL), The Legend of Zelda: Majora's Mask, Diddy Kong Racing, Sin and Punishment and Lylat Wars.
