What are yours? I'd say the three best I can think of are Resident Evil 4, Thief: Deadly Shadows, and Mass Effect.

My best gaming experiences come from Super Mario RPG, and the original Half Life game.
Even after beating Super Mario RPG dozens and dozens of times the part before you fight Bowyer ALWAYS gives me chills. The rest of the game is awesome.
And with Half Life I didn't understand how to kill the helicopter the first time you encounter it, so I quit playing it for months. Picked it up again, played to that part, and figured out how to do it, and from then on that game was an absolute blast. The last boss is kinda annoying though.
Dead Space, Mario and Luigi SuperStar Saga, The World Ends With You, and Pokemon Gold/Silver/Crystal.
Super Mario Galaxy, Grand Theft Auto 4, Super Mario World, Super Mario Bros. 3, Star Wars: Knights of the Old Republic. Oh, and Mirror's Edge has been pretty darn awesome so far as well, but I haven't finished it yet so I guess it doesn't count.
Ok here are mine.
1 goldeneye n64/ds rogue agent, these games were awsome enough to get me back lol,
2 super mario seires , these games just dont stop impressing me, maybe it because they switch it up a notch every time
3 ,resident evil 4 , and gta tie, these are longer games then goldeneye but in the end im afraid goldeneye wins lol

Gta vice city, it was so much fun at the time to drive over people and perform crazy stunts, my friends and i spent hours just driving cars and waiting for them to explode. Since then no game has really wowed me as much or i enjoyed. Hopefully someday one will.

For me it's Metroid Prime 1 and 3 (2 wasn't good). Super Mario Galaxy, Pokemon Gold/Silver, Halo 1, Red Alert 2 and Half Life 2.
Metal Gear Solid 4, Ive never been into any other game like that for a long time. The gameplay parts were fun and the story was a nice end to the series, definetly one of my favourite games out there.

Chrono Trigger and Final Fantasy VI - These came out while I was in Middle School / High School. My friend and I would play almost every day (especially during the winter) getting to the end of these. I eventually had all of my characters at ** on CT as I am working towards now on the DS version. We also worked to get everyone up as high as we could on FF VI, our Edgar was near unbeatable with Genji Glove + Atma Sword + some other awesome sword.
FFX - The last FF game I really enjoyed playing. I loved the characters (except Khimari, but I really screwed him up on the grid sphere, if I had to do it again he would be much better), I liked the plot and the notion of a real world / fantasty dream world. And contrary to popular thoughts I really liked Blitzball! The characters grow on you, the mini-games don't really hang things up for me and are enjoyable and I really liked the game.
FFVIII - Yeah, another FF game, but this one is because I was in college at the time and my friends and I played the game together. It just made the game really fun because you had someone there at all times watching anxiously to see what happens next or to support you. However the final boss battles are what sold it. It was nearing the end of the semester and we wanted to finish before finals so we plowed through some of the game and we really weren't as prepared for the final battle like we would have liked. So it was a tough fight, took nearly 3 hours but the ending was totally worth it.
GoldenEye 007 - I had a N64, four controllers, decent TV and enough friends. That year of college was all about trying to find out people's strategies, what maps which person was better at, and who was the best player out of all of us. Needless to say I hate mines on the Temple level with my friend Dan. The solo game was okay, not nearly as fun as the multiplayer though.
Hot Shots Golf (Any of them) / Mario Golf - Sure they are sports games but they are pick up and play sports games. Totally worth it for the mini-golf mini-games in either series, something that is sorely missed in my eyes from the current gen versions.
You can see that most of my best games are games I played with others. I think it is because you get some competition, some friendship, and the enjoyment factor goes up when you have others rooting for the characters like you do.

StarCraft (PC)--Its still awesome ten years later.
Counter Strike (PC)--Best MP game ever before the cheating killed it.
Shadow of The Colossus (PS2)--I could not wait to see what was next. Amazing experience.

Uncharted (PS3)--I could play this game on crushing over and over again. I like it better than Gears 2 as a TPS. It also had an awesome campy story with absolutely amazing visuals. Nothing has topped it yet on a console.
