Personally I'm a Bullfrog fan but haven't played the new in trend simulator games. I've heard farming and eurotruck is good though.

Anno 1404 is probably the best business/management game ive played. It combines alot of elements so well, managing supply chains, resources, population, entertainment, employment and makes good use of establishing transparent personas to your population; giving the game alot of charm. It helps that the game looks good, too. The business side even provides a means to fuel conflict as the game's resources are intentionally finite in a way to encourage expansion, conquest and eventually, conflict. It really captures that era to give the business/management more entertaining context than just being a startup of a theme park. Cant wait for the new one.

Theme Hospital and Theme Park are probably my most adored when I was younger. I enjoyed Constructor, too when I was younger, it wasnt as great as the Theme Park/Hospital games, but it had alot of very transparent systems as a pretty detailed town-planner, where population, and crime of small districts was a strong focus.

From what I've played of Prison Architect, it's shaping up to be really awesome.

Animal Crossing. .

Nothing more evil than being charged 100,000G from Tanukichi, then being slammed as the new Mayor.

It takes forever to get the coffee shop >_<

It really isn't a sim as much as it's an industry simplified into the confines of an arcadey mobile game, but Game Dev Story has always held my attention for long bouts of time. I really don't play many games in the genre though truthfully.
