It is impossible to pick which game is Kirby's best, there are too many great ones. Kirby's Adventure on NES, Kirby's Dream Land on GB, Kirby Superstar on SNES, and Kirby: The Crystal Shards on N64 are all amazing. I was not a fan of Air Ride, you could say that was the worst.
