Its hard to pick one but right now I'm really digging The Shadowy Gods from Valkyrie Profile. I love the upbeat tune. It really gets my adrenaline pumping.

The fragment of Sovereign crashes into the Citadel and everyone assumes Shepard dies. Yet you see him sprint out from the wreckage and stand on the platform with the orchestra blasting. That moment impressed me all three times I beat the game. :P
I think my favorite was Solaris Phase 2 in Sonic Next Gen... But you can't deny the classics, such as the Super Mario Bros. Ground Theme, the Legend Of Zelda Main Theme, the Theme of Samus Aran, Space Warrior, or the FFVII Battle Theme.
