resi 4, hitman 2 or contracts (only one, there both the same), any silent hill and perhaps metal gear solid 3. if you've played the GTA's then avoid-they've aged kinda badly.
PS2 had so many great games, but the ones I can think of from the top of my head are Final Fantasy X, MGS 2 and 3, Dark Cloud 2, Tekken 5, TimeSplitters 2, God of War I and II, Jak series, Madden 2004, FIFA 06, and Guilty Gear X2.

Just a question why FIFA 06? :D
-Max Payne 2 (singleplayer game I've played through the most times, love it)
-SSX 3 (fav sports game ever, never gets old & has yet to be outdone)
-Metal Gear Solid 3: Subsistence (my 2nd fav in the MGS series,a perfect game, even if the multiplayer's dead, this version has an improved camera for the singleplayer & some decent extras)
-Red Faction 2 (PS2 game I played the most, splitscreen's a blast)
-Manhunt 1 & 2 (they get bashed a lot but I find em really fun & unique)
-Timesplitters: Future Perfect (insane amount of options & gameplay modes, i love the map editor, just wish we could still share our maps online :( )
-Ico (unique & breathtaking game, always loved it, much better than SOTC imo)
-Resident Evil: Code Veronica (my favorite in the series)
-Resident Evil 4 (revitalized the franchise, such a great game)
-Front Mission 4 (favorite turn-based strategy game on PS2, great story, fun gameplay that rarely feels like too much work)
-Mortal Kombat: Armageddon (tons of characters, adventure mode, kreate-a-fighter, fighting game with a lot to offer)
-Killzone (always liked it despite the bashing, one of the 1st PS2 online games I enjoyed, great campaign with lots of level variety)
-Burnout 3 (the most fun racing game of all time)
-Area 51 (just short of a classic cuz it ends too abruptly, lots of fun while it lasts though)
-Jak& Daxter (one of the few platformers I played on PS2, hours of fun adventure, lots of stuff to explore & collect)
-Onimusha 2 & 3 (haven't played the others, good story, fun combat with more depth than expected, more than just Resident Evil with swords. very unique fantasy settings and cool character designs)
-The Punisher (like Max Payne meets Manhunt w/out slow mo & stealth, pure fun)
-Silent Hill 2, 3, The Room (only beat 3, they're all really scary especially The Room, the story is always intriguing even if the puzzles are way too difficult and combat's lacking, not the biggest fan but they're very memorable games)
Let's keep this thread going, I still have a lot to add to my collection also. I'm always looking for games I missed out on in the past.

Prince of Persia: Sands of Time-my favorite PS2 game, a little linear by today's standards, the sequel was decent and the third was good
Shadow of the Colossus- very epic adventure, highly recommend

I know I'm missing some, and I know I missed out on many of the great games for the system
