Well, with the Christmas season approaching why don't you get The Elder Scrolls IV: Oblivion? The game won't be cheap, but it has a ton of points you can glean by completing quests and rising in the ranks in the guilds.
Right now the easiest is Avatar: The Last Airbender. Sports games are generally easy if you adjust the difficulty. But yeah check out one of the achievement sites, like x360a.orgor the one listed above.
