What can we say, majority of the gamers love FPS (add me there XD) and it's been sellling like there's no tomorrow. Anyway, don't be too worried about the gaming industry making too many FPS games, I'm sure they're gonna be making other games, but for now they're focused on FPS because, as I've said, they're one of the best selling games out there.
PS: Don't concern yourself too much on the reviews of other people. The decision depends on how YOU like the game :). I'd be proud to say I've been playing many underrated games all these years and be proud to tell them to other people (consider this XD).
I love FPS', especially the ones with great competitive multiplayer, but having so many out there is a bit of a pain.
I have found though that by having so many FPS' means that when a great RPG or RTS comes out or any other genre, very much so the odd original ones, always end up feeling even more fun and enjoyable to play as they feel completely different to all the other games I have as 75% are FPS'.

It may seem like this is a new thing, but it isn't. FPS rules the (North) American market, and for obvious reasons.
Other than Bioshock, every title you listed came from a developer that already made mostly FPS games, or a sequel to an FPS game - some from franchises almost a decade old!
Those games were going to be made regardless as that is what those developers make. They didnt suddenly decide "hey lets get on the FPS bandwagon!"
Its lower budget devs who really are the ones trying to cash in on a genre thats always been popular. But you cant fault the devs you listed as those devs have consistantly made great games (usually FPS ones). You can blame someone like Insomniac or FASA for suddenly starting to make FPS games.
There sure are a lot pf FPS that came out in the last few years and about 5% of them were rated 8.0 and up, which means most of them are average or plain bad. I guess most bestselling games are FPS because quality developers know that's what we want and therefore they make FPS; if we wanted more RPGs, even Bungie would make RPGs.
I personally prefer FPS over the other genres because it's the only kind of game that really tests the player's skill and reflexes, while leving him total freedom of movement and action (don't know about you, but I find restrictive and frustrating not being able to jump over fences or being enslaved by some absurd combat system like in many action adventure games).
Also, a FPS maps something like 20 keys on a keyboard, which reveals how many different actions you can perform, compared to other genres.
