First I must thank you for starting a nice discussion!
All games teach us something or other-be it shooters or to a greater effect,adventure games(they are kinda rare now).
But the last of the PS2 masterpieces Shadow of the Colossus and OKami has taught me to admire the artistic appeal of games which I don't think I consciously ever did before!
And boy GTA taught me what NOT to do in real life!!!(LOL)
The Civilization series, was fairly young when I started to play, learned a lot from it believe it or not.
I remember the Carmen San Diego games although I already knew geography. For the more technical-oriented, I love the learning stuff in FSX. The game is chock full of information related to flight and aircraft.

In a technology cl@ss I took in middle school, there was a flight simulator. We had to teach ourselves how to take off and land. Landing was the worst :P

I used to play a game where the main character was a frog and he was playing hide and seek with his kids or whatever and they hid throughout time and historical places. it was fun.
I played Cluefinders as a kid. I also had a phonics game called, "Phonics Reading & Spelling" It had a game in it called word rescue that I would always play, it was actually a fun platformer (I was only a kid at the time, so I would probably think differantly today) but it had a cool word mechanic built in that I really enjoyed. I played the phonics game before I went to school so I knew how to spell decently at an early age.
I also had another math game that I played before I entered school called, "Math Journey Grades 1-3" there was another that was a Reader Rabbit math game for ages 6-9. I played them both when I was about three or four years old. I also have memories of old story book games, I had a few magic school bus games that would teach you things as you play different games on them or interact with things on the screen. I had a 101 dalmations game, that had a few minigames but a lot of it was just interacting with things on screen as you hear the story being read to you (with words being lit up on screen) then moving on when you are ready.
Lots of fun playing games as a kid. Plus when I started school I already knew how to spell, count, add, subtract, multiply and do some basic division and I knew a little bit about fractions. However the edutainment games today don't seem as good to me. I loved the ones I had as a kid, even at school there was a space math game that seemed fun but I never got to play it. But to me all of the new ones seem to take teaching to far and not be enough fun. Just my opinion on the matter.
There's also a number of Wii and DS teaching games that many in SW would consider shovelware. But, they're quite informative and useful in the real-world.

Sometimes, it's nice to take a break from games with killing and carnage.
WW2 games, helped me with school.
SimCity taught me how city planing works.
Gran Turismo 4, taught me how to be good in racing games.
Carmen Sandiego for geography, Jones in the Fast Lane for stockmarket and Typing Tutor for learning how to be the best secretary in the world.

I had Road Rash for that. Taught me how to race AND use a chain to properly sabotage potential competition. :P
Age of Empires II had a section about History and it was so awesome( if you think that discusting APOCALYTO movie describes the mayans you better read the mayans section and the Aztecs section).
