I'd like to get into the Castlevania series - which game to start with?

I have no idea what's available on those systems, but the best Castlevania of all time was Symphony Of The Night, for the PS1. I think that you can buy it off the PSN or XBLA. If you don't have access to that, well....You're missing out. :(

Well, it depends which you find more interesting. All of the earlier castlevanias were mostly just side-scrolling platformeers, while the later, more recent games had more of a metroid approach and allowed for exploration, and also had some RPG elements such as leveling up and equiping different items. If you want to try out the side-scrolling castlevania, than there is castlevania 1, 2, and 3 on the NES, as well as Super castlevania IV on the Virtual Console (well, actually, Castlevania 2 on the NES had some exploration in it, though no RPG elements, castlevania 3 I don't know about since I haven't played it). If you nwould rather try the more exploration based, RPG-ish castlevanias, then you have plenty of options to check out: there's Symphony of the Night on the PS1 (and PSP), then there are 3 GBA castlevanias, then 3 DS ones. You may want to buy Circle of the Moon on the GBA and Order of Ecclesia on the DS later, though, because those two are more difficult games of the GBA and DS castlevanias.

You can check out both the side-scroller and exploration type castlevanias with the Dracula X Chronicles on the PSP, however. The game has Symphony of the Night (exploration, RPG-ish), as well as Rondo of Blood (side-scroller platformer), so Dracula X Chroniclles would be a pretty good choice to start out with.

Get Chronicles or whatever it's called for the PSP. Then look online to learn how to unlock Symphony of the Night. Play Symphony of the Night and you'll see how awesome Castlevania is. If you want some Classic (linear level by level whip lashing style) Castlevania action, go with Super Castlevania on the VC. Order of Ecclesia is the newest and freshest take on Castlevania, which turned out to be very good.

Two different versions exist, of Castlevania that is. Super Castlevania 4 represnts the best of the traditional side scrolling games. Castlevania: Symphony of the Night respresnts the first and possibly still best of the "Metroidvania" games, which have RPG elements and take after Metroid for having a larger game world which you explore and cannot gain full access to without certain items that you find in the areas you can access initially. Some of the recent DS games are pretty good, and all of the Metroidvania flavor. You can also get Dracula X Chronicles on PSP, featuring the other best traditional game, Rondo of Blood, and an unlockable enchanced port of Symphony of the Night, with better graphics, sound, and voice work.

Like Michael-Smith said, get Castlevania Chronicles purely to unlock Symphony of the Night. If you can't or won't (I found it difficult), then skip straight ahead to the GBA version (hope you dont own a DSi) and start with Aria of Sorrow (GBA); next Dawn of Sorrow (GBA); next Order of Ecclesia (DS); next Harmony of Dissonance (GBA); and finally Portrait of Ruin (DS). I haven't played any Wii version, but from my understanding isn't worth it (NOT including VC).

Well I'm glad you didn't list N64 cause I would tell you to avoid both titles on that system. Symphony of the night is what I have been told is good, I also think that circle of the moon on the GB advanced is good. There is a version of Symphony of the night for the psp.

Castlevania Legacy of Darkness is actually pretty good, avoid Castlevania 64.

Symphony of the Night is the standard, so anyone who wants to play this series should play that first. Then you should play Order of Ecclesia, which is my favorite one. But it doesn't matter. Portrait of Ruin, Dawn of Sorrow, the GBA games...they're all good and very similar to each other.

Symphony of the night is a stellar game, if I had not played many of the first ones this would probably be where I would start.

Symphony is almost like a prerequisite for anyone wanting to get into Castlevania. That being said, I recently finished Order of Ecclesia, and I really enjoyed it. If you dont mind playing a modern title, I'd definitely recommend it.

Castlevania Chronicles is a good start. Otherwise get/download SoTN.
