The only thing that comes to mind is the final boss of Darksiders. Awesome awesome game but the last boss was just not on par with the rest of the game. People who beat the game know what i'm talking about. In the cutscene he's portrayed as a much bigger force, then you fight him and he's anything but intimidating.
On another note i think one of the weirdest bosses i've ever fought was in Mario RPG. It was probably the toughest birthday cake boss i'll ever see. Thats right a birthday cake....surprisingly a fun fight though and by no means am i bashing this boss. One of my favorite games of all time.
Fable 2 & AC2 come to mind.

ahhaha yeah, i expected lucien to turn into a giant monster after his speech, but then he got headshot by reaver -_-
Hmm.. The final boss in Uncharted Drakes Fortune. Press O, /_\ and [ ]
.. Otherwise I'd say the monkey in the forest temple(TP).
Assassins Creed 2 final boss was too easy, I just wanted it to be a bit harder than grab punch/kick/headbutt repeat till dead.
The other game would be (I think it was) Earth Worm Jim on the SNES. It was a goldfish, in a fish bowl, on a ledge. Knock it over to defeat the final boss and its the end of the game. It's funny but come on!
Any boss that requires three attacks to defeat, either single strikes or multiple strikes at once, are freaking lame.

oh c'mon. I loved that. It was boss fight satire...for all those games with the long winded bad guy, the bad guy that changes into 10 different forms before he finally has the decency to die...here's a game, one shot, right between the eyes, **** you and your evil-by-numbers plot. Goodnight. Perfect.
The Boss fights in Arkham Asylum were by far the weakest parts of that game.
In general I think boss fights are pretty overrated, hopefully some developers can start doing something new with boss fights.
God of War has pretty good boss fights, however.
The fight with the End in MGS 3 is one of the coolest most unique boss fights I've ever played.
Joker in batman aa
All it was is wave after wave of guys and then you pull him in the floor and kick him.
The bosses in Darksiders were great, but the fact that by the time you fought the second one you already have like 6 health bars and popping into chaos mode resulted in some bosses dying in two hits, and that just spoiled things.
Otherwise, the weirdest bossfight I ever had was in MGS3 with that old sniper dude, he always managed to sneak up behind me and shoot me in the head, but changing the date 10 years forward ended things quickly. Ghost boss was awesome too..
Cortex in Crash Bandicoot 2. I love that game, but horrible boss. You can't be killed, but if you don't catch him before he gets into the Vortex, you lose a life. Pretty underwhelming.
Desert Rat in Delta Force Xtreme II. It was bad even for a budget game. The main bad guy you have to kill is not only hiding behind a door, unarmed, and unguarded, but you have to travel 15 minutes in the desert to find him (but you can go right to him in 1 minute without actually playing the level, because the level design in that game sucks). The bad guy is the same 3DI as the enemies. They were too lazy even to give Desert Rat a new skin. Bad game. When you walk up to him when he's alive, he just stands still lifelessly. Doesn't even try to get away. Don't buy this game, ever.
Burt the Bashful from Super Mario World 2: Yoshi's Island.
The goal of the fight was to take off his pants with eggs.
Not lame at all, but just silly.
On the flip side, the lamest boss I can think of would be the final boss from House of the Dead 2. The douchebag copies the moves of every other boss in the game. Sega just got lazy on that one.

The flowerpot ghost from Yoshi's Island was even worse, if I remember correctly. He just spits shy-guys at you, and pushes you until you shove him off a cliff.
The Yoshi's Island bosses, except for the one where you had to shoot his heart with the eggs, were really easy.
You all fail. The Corpser from Gears of War is probably the biggest and baddest looking monster out there in the entire game series, but is perhaps one of the easiest to defeat, even on Insane. I mean shoot it in the gut and then mouth then repeat. The real threat is if you are just dumb enough to get up near its claws. Seriously, biggest pushover boss ever.

It's been so many years since I played that game, I've forgotten most things about it. I faintly remember that boss.
I'll have to youtube that.
