I've never played any mgs games, and don't have time to play all of them now. I'm wondering with mgs 5 having a prologue seperate from the main game would that give me enough back story to enjoy the new games?

It's tough to say. The MGS lore is very intimidating for new comers. Lots to know.
Honestly, Ground Zeroes (Prologue for MGS5) is very brief in story but provides wonderful gameplay. I'd just grab that, play it, and if you are interested in what you see then go back and get the MGS Legacy Collection. Or be lazy and just read the many game breakdowns online. Your call.
The older MGS games are certainly dated in terms of gameplay but the story and characters are such a strength of the series you may still love them. MGS and MGS3 being my favorite games of all time.

You can always buy the Legacy Collection before you dip into GZ which takes place after MGS3 and Peace Walker.

Don't bother trying to understand the MGS narrative. It is horribly written, all over the place, rife with plot-holes....a laughably convoluted mess. Even Kojima himself he just makes it up as he goes along, the guy's an atrocious storyteller who just happens to be an incredible game designer. If you really need to know and don't have the time to play all the games, there are videos on YT that will help you get up to speed. Just expect to be confused.
