Hey I just got my hands on a Nintendo NES from a Uncle who was moving. When I got it I noticed it had an RF switch but no AV cable. My question is do you need both in order to hook up the system not?
RF cable alone will do the trick. You'll just have to tune your TV to the right frequency to get picture and sound. I'm not sure if the NES ever had an AV cable. I can't say I've seen one anyway.
the nes does have av composite out only in mono unless you have an audio splitter then its twin mono

This will only work if it's the original large (boxy) NES. If it's the original model it can use any composite AV cables that happen to be lying around. I think the top loading model is exclusively RF. They're more reliable but unless you modify the system the video just isn't as good.
