I always thought of tilt as some overall view of the game. And also a way to bump up the score, incase you had to mark the games graphics or sound down because they sucked... though you may have loved the rest of the game.
Could also be a way to lower the score of a game you didn't like, even though its graphics or sound were perfect. For example, you could mark up Gears of War with perfect sound and graphics, but lower it with the tilt... giving the review honesty in your opinion of it. Yes graphics were great, but maybe you just didn't enjoy it.
It's an overall category that helps balance things. Like let's say a game has a fantastic story but horrible, horrible graphics. If you give the game a 2/10 in graphics, that'll bring the score down really low. But if it's still a great experience and you have a low rating after all the otehr categories, tilt can help make things right.
But tilt no longer exists.
