Do you feel the AI in Prince of Persia was good? There are legitimate gripes about Assassin's Creed AI but it's much better than PoP IMO so if it didn't bother you there it shouldn't here.
PoP had great environmental puzzles while AC uses similar mechanics to navigate an open world setting, allowing you to be more creative in how and where you use your acrobatics but not in a brain twisting kind of way. AC mashes up many more genres than PoP did (sandbox, action, stealth, adventure, platformer) so it's a much more ambitious affair. This can lead to problems depending on what your expectations/tastes are while PoP plays it safe and is pretty much universally praised.
Personally I love Assassin's Creed and think it's at least on par with the experience you get from PoP, I'm continually impressed by the gameplay and the world created by the development team. No doubt it's a more interesting game, but better? You'll have to play for yourself, no one should convince you either way when it comes to a polarizing game like this.
I really enjoyed both games.
My only real gripe with AC is the fact that the guards are really apathetic. You can murder someone in front of them, run off to some hiding spot for a second, and then go right back to that same guard and they wouldn't think twice about you.
but overall AC is an extremely enjoyable experience. combat is quite fun but can get somewhat tedious when you end up fighting 30 guys on accident because there aren't enough hiding spots in the kingdom :x
