I would say begin with the first game, "Resident Evil Director's Cut", available on PSN or you can get the disc version for cheaper prices at resale or online. It sets the whole ball rolling, and you'll have a greater appreciation for the refinements of the following titles - There's really nothing bent or broken with the first game, technically, but they did hone the process in later games and just kept making them better and better. Plus, you owe it to yourself to hear some of the worst voice acting in the series... It's an "All Your Base Belong To Us" video game history high watermark.
My personal favorite version of the first game is on the Nintendo DS, actually ("Resident Evil: Deadly Silence" - Get it? Deadly Silence? Aw-haw-haw, clever CAPCOM)... The reason I like that version is the dual screens give you a map that's open all the time, and they might have made some tweaks to the targeting for the platform. Stylus control is really only for inventory manipulation, and a tacked-on knifing control... But you can play it traditionally with D-pad control like the original title.
The first through third games are gaming royalty, and you should definitely try them out, starting with the first game. Then you'll know who all the characters are, and the series will unfold like a lotus. Then, you'll (hopefully) be addicted like the rest of us...

I completely agree with playing the first game first. But I highly, HIGHLY recommend playing the Gamecube version over any other version. It EASILY the best version of the many different versions of Resident Evil 1. The graphics are amazing, IMO some of the best on the Gamecube that even holds up to many modern system games. The lighting effects in particular were jaw-dropping. And they added enough in there to make it feel different, yet not so much that it's an entirely different game and it doesn't change the story, it's the perfect amount.
You're talking about "REmake", I assume, and yes it's really great, but you'll have an even better appreciation for "REmake" after completing the PS1/ NGC/ DS version of the original "Resident Evil" first. Also, most items have been shuffled in "REmake", and some minor additions to the maps & monsters have been added to "REmake" on the GameCube to make it a fundamentally different experience for those of us who have memorized the PS1 version of the game. So playing one of the first versions (on DS, NGC, PS1, or Dreamcast, etc) is recommended first, I'd say.
