If there are a few RPG's that set in China or Japan, that would be interesting. Do you think so ?

These 2 games come on the top of my mind.

Guild Wars: Factions
Jade Empire

Then there is Alpha Protocol where about 1/4th of the game is spent in China.

Edit: well neither GW or JE are based in those nations, however the setting is inspired by them.

Shadowhearts (PS2) is in Europe/Asia.

Nice gothic atmosphere to it.

FFVII you travel to Asia, though they hide the fact it's Asia, the FFVII world map is just a slightly morphed version of the real world map flipped upside down, and Japan is made to be like really big, like 10-times + bigger, reminds me of the ethnocentric cartography we see in old maps in history books. And of course they also used this flipped slightly morphed map to covertly be critical of the US.

Also, I think as far as Japan is concerned their games aren't allowed to really definitively have real world locations involved or something to that matter, like the excuse behind censoring Homefront into saying something like that country to the North instead of North Korea. It's probably why games like Valkyrie Chronicles seemingly being a WW2 game aren't exactly that with concern to the worlds they are in. Not sure what the exact rules are because I think some games that area released their violate this.

The World Ends With You takes place in Shibuya Japan. And no it's not just inspired by it, they call it Shibuya. And they have real landmarks as well.

There's also an MMO (not sure if it's still up and running) called Silk Road that takes place in Ancient China. I used to play, but got bored real fast.

I wouldn't call Shenmue an RPG though. More like an open-ended adventure game with a few RPG elements here and there.

Most Shin Megami Tensei games (including Persona) take place in Japan.

As much as I 'm ecited for Skyrim, I would get 10 times more pumped if there's an open world, fantasy action RPG like it set in feudal China/Japan

Total conversions can give the game a feudal China/Japan setting.

However for a total conversion to come out, someone needs to make it. I played Oblivion with a total conversion which gave it a pretty eastern european setting. For Fallout 3, I tried a total conversion to give it an egyptian setting.

You know, I just thought of it. There was a Super Nintendo RPG, back in the day, called "Inindo: Way Of The Ninja". That game was set in Japan, if I remember correctly. It was an fun, but odd RPG.

They made that into a role-playing game once? I thought it was exclusively a fighting game series.
