I've been playing the PS1 since 1998 and these are some of the best games I've played over the many years. :P
Spyro The Dragon and Spyro 2 Riptos Rage
Crash Bandicoots 1, 2 , and 3 (aka Warped)
Metal Gear Solid
Tekken 3
Tomb Raiders 1, 2 (was my personal favorite), and 3
Kagero: Deception 2
Silent Hill
Resident Evil 2
Colony Wars
Ape Escape
also those games mentioned above are good as well.
If you can list a specific genre you like best I can give you a list of more must have games.
Metal Gear Solid(I recommend MGS Essentials)
Final Fantasy Chronicles, Anthology, IX & Tactics
Crash 1, 2, & Warped
Castlevania: Symphony of the Night
Lunar & Lunar 2
Grandia
Front Mission 3

Some games that , in my opinion, still would compare favorably to todays games would have to be games that don't really too too heavily on graphics or wow factor of being one of the first CD based systems.
Parappa is still great. A little simple on the whole rhythm game by today's standards but the songs and story are just so fun!
Castlevania: SotN. Especially if you haven't played any of the DS iterations. Even if you have this one still has more twists and turns, literally, than the great portable games.
Any RPGs? I know it's a terrible thing to say but yeah, if you've played FFX and up I might not even bother with any of the PS1 FFs.
Yeah, FFVII seems to be the most popular one ever and I played the hell out of it when it came out but if you've been exposed to the basic story by way of the interwebs than I would be hard pressed to justify the time playing through it. The graphics at this point are beyond clunky and the non-skippable summons will drive you nuts. There's just too much polish on the current round of FF's to give this one a try without any sense of nostalgia.
Oh... and can I add that Chrono Cross may be the most overrated game ever? Good lord, what a bore fest.

you can play FFX and still go back to the previous FF's.
FF7 is yes, clunky and the graphics arent the same, but the story is still there. FF8 and 9 are quite probably more close to FFX in terms of graphics and realism.
FF8 will always remain my favorite FF ever.
You should definitely pick up the original Spyro the Dragon trilogy: Spyro the Dragon, Spyro 2: Ripto's Rage, and Spyro: Year of the Dragon.
They are amazingly fun.

Why did you rate Year of the Dragon a 10 when it is arguably the worst of the trilogy?! :cry: Both the first game and Riptos Rage were much better games.

There are many great games listed here in this thread but i add two titles which werent mentioned:
Einhander (GREAT SHMUP...classic horizontal 2d gameplay but its all in very well made 3d...and the camera changes into cinematic views...very very good gameplay)

Here's a few people before me didn't mention, but they're all excellent games - I assure you, I'm serious about the first one...:
"REEL Fishing" - Seriously, I LOVE this series. It's a relaxing cleanser for the mind. It's about catching fish, and enjoying some time. It's not one of those loud, timed, Sega Bass Challenge type games... It's unique and magic. Try it before you laugh.
"Pandemonium!" - Best 2.5D platformer EVER.
"R/C Stunt 'Copter" - Amazing controls, unlockable aircraft, great challenge, all-around fun!
