Frankly, unless the remakes have game-breaking glitches, it doesn't make any difference. For example, the various remakes of Final Fantasy 4 have tweaked the interface and added plot elements that weren't in the original (english language) release, but apart from that, it's pretty much the same game across the SNES, PS1, GBA, DS and PSP.

FF3 and 4 have been given upgrade graphics on the DS, and FF4 on the PSP comes with a whole extra game (The After Years). What steps back did they make to the DS version?

According to the definiton given on this forum, WaW, MW2, and BO were all ports.

The DS version of Chrono Trigger is great, but it's not too different from the SNES version. It got a new translation that's more faithful to the original script, better interface, a new ending, some additional dungeons and sidequests that feel tacked on, the monster arena (which I don't care about), and some other stuff like the bestiary, music box and the FMVs from the PS1 version. The music sounds a bit worse on the DS, even with headphones. I honestly don't think it's worth getting if you already have it for the SNES.
The GBA versions of the Final Fantasy games are just slightly enhanced ports, no big deal there.
The DS version of FFIV, on the other hand, is an actual remake, with 3D graphics, a new translation, some FMVs, voice acting, harder gameplay and a lot of other stuff. But I haven't played it, so I can't say much about it.
