There are a lot of games I'd love to see remake, but another part of me says that would be a terrible idea--simply because in remaking something, they'll probably loose what made the original so awesome.
Some that I would like to see, but probably hate to see at the same time:
--Magic Sword
--Demon's Crest
--King of Dragons
Those are some of the true Capcom SNES gems, I'd rather remember them for what they are than see them made anew.
With all the Capcom series revivals that seem to be taking place on current-gen hardware, like the following:
Bionic Commando (2D remake either on or coming soon to PSN/XBLA and full-blown 3D game coming to PS3/PC/360)
Commando (sequel to it's sequel coming to PSN/XBLA)
Ghosts and Goblins (remake/sequel on PSP)
1942/1943/1944/19XX (2D game coming to PSN/XBLA)
Street Fighter (SSF2T:HD Remix coming to PSN/XBLA and SF IV in the arcade)
I would like to see a remake of Black Tiger and Commando (not a sequel).
I played these at the bowling alley in 1987, and they are still at the top of my favorite games list. At that time, we didn't have NES, and nothing we might have had on the computer could compare.
Black Tiger is memorable for it's graphics (nice 2d animations, especially for 1987), and gameplay (action similar to Castlevania, but also the ability to upgrade your armor, weapon, buy potions and keys). The boss battles were also pretty tough for my 9-year-old self. The level design was also pretty dynamic, with each level feeling different from the previous.
Commando is memorable for it's graphics (it was kinda like playing Rambo), and gameplay (run & gun - where you only needed 2 buttons - shoot and throw grenade). Commando is also one of my favorite games because it's one of the few games I've been really GOOD at. I don't think I could even get close to 1 million points in the game now...

I forgot about Parasite Eve! That would be great remake!

Yes!!!! with full 3D holes you can jump into and maybe find a piece of what ever it was you trying to do and that would be in 3D too. and et would in 3d in and when you extend his neck he fly's out of the hole in full 3d.

Yoshi's Island (SNES) IMHO best platformer ever
Shonen Ninja Sasuke (SNES) One of the best beat'em up
Bare Knuckle 3 (GEN) IMHO best beat'em up ever (streets of rage 3 is cut and censored)
Severance Blade of Darkness (PC) Outstanding game where every fight is a "dance with death". Also nice gore.
Metroid 2: the return of samusstarmetroid
BAM! that's my pick, too. Metroid 2 was an awesome game.... I could only imagine it in fully redone graphics. I would love to see an "HD remix" of Super Metroid, too, but it's still an awesome game as it is, so M2 would have the higher remake priority, imo.

There's a big market for classic games right now and game companies are taking notice. In the next couple of years I think we'll be seeing a lot more games being remade or re-released on newer consoles.

Doesn't Super Mario Advance 3 suffice? It sure did for me...
