I haven't played I or II, but recently played the NES version of III with an English patch. It was the most difficult of the FF games that I've played, but there were only 3 instances in the game that grinding was necessary, and one of them was for an optional dungeon. All I really had to do was fight every battle entered, with the exception of those that were clearly best to run from.
Story wise, FFIII is simplistic, as to be expected. This being said it had some good moments, almost on par with moments in FFIV for me.
The job system was also rather nice. There are certain segments where you are strongly influenced to use certain classes to succeed, but for much of the game you can use whichever classes you prefer and get by.

Some of the diffiuclty in the game is due to a few creative although frustrating dungeon design decisions. Before FFIII I'd never played an RPG that forced me to complete multiple dungeons with a crippling status ailment on the entire team. (There are at least 2 in FFIII that force your team to be in mini status)

One serious complaint I have about the game is the final boss though. It took me about 2-3 hours to get to it with no save points available, and I then lost because of the boss' damage dealing capability. It's one of the simplest battles I've ever played, but if your team doesn't have adequate health/healing capability, your basically dead on arrival. I don't know if I'll ever finish the game because of this, as my party will need 3-4 levels of grinding before starting the final dungeon again in order to win, which isn't really worth the wasted time to me.
Overall I enjoyed the game and would recommend it to people who enjoy the FF series. Aside from the final boss the game was quite enjoyable, and while short there is some potential for replayability due to the number of jobs available.
