I've heard there are some pretty cool bosses in Demon's Souls, but for me, God of War 3 takes out the title with..pretty much all the boss fights-they're all epic!

For me the most rewarding bosses were always the megaman ones. I know they're very simple, follow a pattern and are susceptible to certain weapons but that's what I love; learning those things and defeating each boss.
Favorite Boss : Ganondorf from Ocarina of Time. Nice mix of attacks required to beat him and a decent length of time to complete.
Biggest PITA boss :the guy you fight from the back of the jeep in RE5.
Most creative : Final boss in GOW 1. The shared life bar is awesome and a nice change.
Hardest boss : Probably Sephiroth from FF7. I never managed to beat that guy for some reason.
Really, Resident Evil 4? I love that game, but most of the bosses are jokes. Half of them I killed with a rocket launcher, one shot.
My favorite boss fights are from shooting games like Ketsui. The bullet patterns are mindblowing.
Nyx from Persona 3. You had to beat her 14 times! Then after that there was an amazing scripted sequence that ended the game perfectly.

I would say Shadow of the Colossus... but it just seems so cliche to say it now. The best boss fights I've ever been in are as follows:
Both come from a any% speed run of Super Metroid on the SNES. The bosses in question are Phantoon of Wrecked Ship and Ridley of Lower Norfair. The former is a pain in the ass because you essentially have 1-2 energy tanks at the beginning of the fight, and all you have to fight with is the Charge/Wave/Spazer beam combo. It takes excellent timing and some skill to beat the big balloon face. The latter is even more difficult, as you end up there with 4 energy tanks, a handful of Missiles and *maybe* one or two Super Missiles. He is even more difficult than Phantoon in terms of power and speed, and has a completely unpredictable pattern (unlike Phantoon).
Super Metroid has amazing boss fights... and I really haven't met another boss in the history of my gaming career that is as memorable as they are.
The one I'll never forget is queen ghoma in the legend of zelda the ocarina of time.That game blew me away from start to finish and really every boss battle in that game.While its not the revolution it used to be those boss battles in that game were the best for me!
I remember in MGS1, when I was 12 years old, I got to the Metal Gear and when it went into the boss battle I got all scared and was like, "Wait.. wait, you mean I've got to fight this thing???!" :o

MGS4 - Rex Vs. Ray, was amazing. As was the final fight against Liquid Ocelot.
Shadow of the Colossus - no explanation needed.
Star Wars: KOTOR - Darth Malak, a satisfyingly epic last fight.
Also, pretty much every boss in Bayonetta was awesome.
This one time, my boss was being a jerk so I left for the day... oh wait.
Angra Manyu in FFX-2. I fought the mother for 2 hours straight, completely unaware of what Catnipped Trigger Happy 3 does (18 x 9999 damage). I pulled out all the stops there. Most intense fight ever, at one point Paine and Yuna were both down and Rikku had like 200 hp left and I barely pulled through. You best believe I got to the nearest save spot I could after that.
