Abuse - It's Abuse. I dunno. Everyone else loves their Contra and such, but my own defining sidescrolling shooter was on a Mac, and I believe it was even published by Bungie. I wish more games had the same manic feel, and getting to run around with one hand while aiming with the mouse sure didn't hurt either. I loved the shower of body parts the aliens would collapse in when nailed with an explosive.

Blast Corps - Any game that lets you slide around knocking over buildings on the moon in a dump truck automatically qualifies for a top list. I think I liked it so much because it captured some of the feeling of pushing around little toys cars in a sandbox, destroying everything with huge fake explosion sounds.

Chrono Trigger - I'm allowed one obvious choice, and this is it.

Dark Castle - The Mac original, not that awful Genesis port. I'm tempted to roll Beyond Dark Castle in as well, since it improved a lot on the original (less frustration, mostly). It has the honor of being the first game I ever played, way back in the 80s, and it's also one that's held up surprisingly well over the years. The downside? My Mac Plus died and my Mac ****c is on its last legs, and neither game works on any other computer or with any form of emulation that I've been able to find, so my days of Dark Castle are numbered.

Escape Velocity - It's like Trade Wars. Except, graphical. Er...sort of. It's a resonably ugly game, and one that's pretty simple in concept: make money by buying and selling goods or transporting passengers across solar systems or destroying pirates or whatever, and use that money to buy bigger ships and more weapons. I played far more of the game than was healthy, since it had a bit of depth and the lure of being able to afford just one more upgrade. Flying a tricked-out Kestrel with your cargo bay refitted with four fighter bays was just plain awesome. Plus, someone made a complete mod that refitted the entire game in a Star Wars universe with corresponding ships. **** yeah.

Fallout - It wouldn't take a whole lot of prodding to get me to proclaim this as my favourite RPG of all time. Great setting, great characters, and more than a load of **** when it came to offering a world of choices. If only the time limit wasn't so strict sans patch.

Myth 2 - Likewise, it wouldn't take much effort to get me to point at this alongside the letters RTS. I don't hate RTS games, mind you, but I get annoyed with the tedious base building aspect that 99% of them revolve around. I loved Myth for breaking away from that and making the game all about combat. Plus, the dwarves were awesome, cackling with glee in a homicidal sort of way as they'd lob molotov cocktails all over the place and blow chunks of your enemy into the sky.

Red Alert - My exception to the RTS rule. Campy and satisfying.

Rollercoaster Tycoon - I don't know how many hours I spent tunneling rollercoasters underground for extra excitement bonuses or ordering my little guys to clean up puddles of puke on my paths. The whole game was just painstaking, and horribly, horribly addictive.

Ultima VII: The Black Gate - The first RPG I really got into. I'm talking an obsessive sort of way. The sad part is that I have never finished the game's main plot to this day, I just wander around the world and do everything but. My defining moment in it involved killing Britain's shipwright, enabling hack mover and ripping out the half built ship, and then reorganizing the whole place into my own twisted storehouse of armor and bodies.

Unreal Tournament - I play more UT2004 now, but the first UT hooked me for a long, long time, and there were a lot of us who played it in my last year of high school. Loved assault mode, and loved the flak cannon and all of those juicy, bouncing gibs.

Yoshi's Island - Best Mario game, ever.

I guess that's twelve. Oh well.

If only more posts were like DJ_Lae's (especially your's, OP), I'd leave this thread open. But since this is General Games Discussion and not General Games Listmania! - lockdown.
