I want to try and steer away from Dota/Hearthstone/Counterstrike tournaments and matches and get more single player suggestions.

I like to watch any game I'm interested in but won't buy, or on the fence about.
Or an old game I missed out on.
Sorry I know you were probably looking for specific games and such, but that's my general suggestion.
Shadow Tactics is kind of fun to watch, isometric stealth-action-strategy. Good story, good narrative, nice audio, nice hand-drawn visuals and excellent characters and voice actors in english and japanese.
Small indie games like happy room or story driven games like oxenfree, life is strange etc.
I recommend watching jacksepticeye.
I like stuff like Telltales game since well ... you would play them only once anyway ... or games that I find a little interesting but won't buy because meh.
Like I watched Markiplier play DOOM, it was cool with him because I didn't have that much fun with it. Or I like Gamegrumps because it is always stupidly funny when they play crappy game.
For me it depends on how entertaining the person or people doing the videos are but I can generally watch most anything. Resident Evil and Dark Souls games would be my recommendation .

I agree with this one, games like The Walking Dead are extremely enjoyable to watch and maybe even more enjoyable than playing yourself as you can see someone's reaction to certain things which makes it almost like you were playing together.
I don't watch to many games online, but my son loves watching a couple guys on YouTube play Minecraft and it can be pretty funny at times, you could also watch minecraft story mode.

Yeah the Telltale games are an obvious pick
I watch people play pokemon where they make rules for it (nuzlockes). I watched people play Firewatch, Until Dawn, and games I was on the fence about. I think the best games would be strategy-like games or story driven games (ones you don't to play yourself).
I can't stand playing the Telltale games. That style of gameplay makes me want to pull my hair out. I'm a fan of their storytelling and characters though so watching no-commentary play-throughs are a happy middle ground for me.
I also love watching "Many a True Nerd's" Fallout 4 survival mode videos. He's the only youtuber who doesn't make me feel like they're ejaculating personality all over my face as I watch lets plays.
