To tough to call, probably Rallisport Challenge 2 if I had to choose but there were so many great games. 16 player co-op on Ghost Recon 2, Psy-Ops, Kotor, Halo, Desert Storm series, Brothers in arms series, Battlefront, Splinter Cell, Psychonaughts, Conker ect. ect. ect...
Never really owned an XBX (just played either PC ports or a couple titles that worked with 360's BC), but of the bunch I've played, Ninja Gaiden shined through.
(which looked excellent with the 360's upscaling and anti-aliasing)
