I'd also go with The Forbidden Kingdom (that's the one with Jackie Chan and Jet Li right? With some doofy looking white boy as main character)
I think that movie has best set up for a game. Make it somewhat like action RPG, and you got yourself a good game material.

The Forbidden Kingdom would also make a good game.
Storm Riders would make a pretty good one for over the top fantasy-type martial arts and Eight Diagram Pole Fighter would make an excellent weapons martial arts game.

Wheels on Meals would also be great as a game, as it could also be considered a remake of Kung fu master from the 80's arcade. That game was loosely based on the movie, so it would really be a full circle.
