In most of the old games, the fingers of the characters were like welded together, or their thumb was seperate from other fingers but others were inseparateable(RE2) or thumb&index finger was able to act normally(MGS2&3). Was it Shenmue which featured separate and detailed fingers for the first time? It also could be Soulcalibur but because of their fighting stance I'd say that game's finger placement is separate thumb&index finger. It should be a Dreamcast game but I'm not sure which one is it.

Virtua Fighter from 1993 had individual fingers. So that predates the Dreamcast by a few years
