FF Anthology (V/VI) and FF Chronicles (IV/Chrono Trigger) were the definite best (aside loading times but it didn't bothered me much.) and they were remake. I'm proud to own both. Also the Breath of Fire games on PS1 were amazing.

final fantasy IX was my favourite

alundra was another great one, it doesn't get too many mentions nowadays
