Oblivion. It doesn't have an ending, the game keeps on running even after you finish the main quest.
easily Guild Wars. Last time I checked I was nearing 4000 hours. But I only play it on and off anymore. Of course, 4 years of playing will make anything lose a bit of its luster (not to mention, i sorta ran out of things to do). Love my time with the game and am eagerly awaiting its sequel.

I probably put at least five times as many hours into Morrowind as I did into Oblivion, and I still never finished either of the expansion packs. Crazy stuff. :P
That probably isn't my most time-consuming though. I'm not sure what is.
*edit* I also remember playing and replaying older games, like Fallout 2, for years without ever getting bored with them.
Fallout 3 with all the expansions. I also added player made mods to spice it up, some of them are great bits of work that don't spoil the game but only enhance it with stuff the main crew probably would of done if they were not being pushed by publishers.
With Fallout 3 main game, almost every side quest, The Pit expansion, Point Lookout, Opperation Anchorage and Broken Steel I clocked up about 90 hours. I got to know my little character very well. Didn't bother with that Mothership Zeta one and from what I hear I made a good choice.
Starcraft. CIvilization and Pokemon
Starcrat and Civ last for years while Pokemon games are usally the ones I marathon play
I've gone through FF X International twice with around 150 hours in both playthroughs for a total of ~300 hours. Not to mention umpteen hours on the God of War games when I did my NURs.
Team Fortress 2 all the free updates keep me coming back for more although Counter Strike consumed more of my time if you add up my playtime for all 3 versions since there basically the same game.
TESIV:Oblivion.
2nd is Dragon Age: Origins with 7 playthroughs :P
