Pokemon Snap, though there's a heavy amount of nostalgia behind that choice. The pokemon stadium games were fun, but I tried going back and playing Pokemon Stadium 2 recently and I really didn't find it all that great. Especially the fact that the announcer never shuts up and says nothing but really obvious stuff.
