Mario Kart DS is the best game. As for the game that I have had the most fun with however, that would be Mario Kart 64, just because playing on the big screen with your friends cannot be beat.
The N64 was my favorite simply because it had the most robust multiplayer death matches and that was a ton of fun to play with friends back in the day.

the MarioKart64 on the N64 is the best mario kart game i have played. You cant beat 4 player split screen with 3 of your buddies. I own a GBA SP and Mario Kart for that is fun too.
I'd say the DS version as it's also got some tracks from all the games into one with some new tracks. I've had them all and would say the DS we have the most fun with. Also the team play with 8 players is a blast and makes for some good times.
I find myself unable to decide. A couple years ago, I'd definitely say Mario Kart 64... but since buying it on Virtual Console, I see now that the game really wasn't very impressive. It certainly hasn't held up well over the years, and the real meat of the game was always the multiplayer, which isn't as good as it used to be. Playing Mario Kart 64 again has really made me appreciate Mario Kart: Double Dash a lot more. I was really initially disappointed with Mario Kart: Double Dash, but now I think it's really fantastic and arguably one of the best games in the series. Though, Double Dash's battle arenas certainly were lacking. Then of course, the original Super Mario Kart is pretty legendary... I'm not sure if any of the games can truly measure up to it. Oh, decisions, decisions. I guess I'll pass on voting since I'm pretty undecided here.
Say what you will about your newfangled "graphics," Super Mario Kart for SNES has them all beat. The 2-player mode in that game was insane. No counters here, you watched your a$$.
