I play Sakura in Street Fighter and Asuka in Tekken.

In Persona 4 Arena I play as Shadow Labrys (the one with the big bull not the normal Labrys variant)
In Dead or Alive 5 I play as Marie Rose
Depends on the mode I'm playing. In single player modes like Arcade or Story I play through with the whole roster. In online matches I typically play as the 'main' characters for those games ie. Ryu/Ken in Street Fighter, Kazuya in Tekken, Jin/Ragna in Blazblue, Scorpion in Mortal Kombat, etc. although I also like to mix it up sometimes with different characters every now and then.
Street Fighter
Ryu is my main, but I know how to play as all of the shotos, Guile/Charlie, and Alex; and the bosses
Dead or Alive
-I play as Ryu Hayabusa for the most part and I choose Hayate, Brad Wong, and Eliot.
King of Fighters
I choose Terry Bogard, Kyo, and Ryo. I like Kim.
Garou: Mark of the Wolves
Rock Howard.
Tekken
Jin Kazama is my main, but I know how to play most of the characters.
Bushido Blade II
Kannuki.
Mortal Kombat
Subzero.
Marvel vs Capcom 2
My main team is Ryu, Cyclops, and Captain America. I know how to play most of the characters.
Ultimate Marvel vs Capcom 3
I can play as anyone in that game, too, but my main team is the following: Captain America, Ryu, Dante.
Main in Tekken is Yoshimitsu followed by either Jun, Jin or Ling.
Main in Street Fighter is Chun Li followed by Dudley, Guy or E.Honda.
Main in Guilty Gear is Jam but Xrd decided to hate me so I casually use Leo Whitefang.
Any other fighter I don't take serious enough to Main a character. Fighters are science and can only dig into so many. .
I'm not terribly good at the games, so I tend to play a more "jack of all trades" style, and pick characters I like the look or fighting style of and try and do my best.
The best I've ever done was with Sektor in MK9. His teleports are OP.
Soul Calibur: Mitsurugi, Siegfried, Yun-Seong, Kilik, Darth Vader, Raphael, though I know how to play as everyone.
Fighting games are fairly simple to learn once you master a couple different ones such as Tekken and Street Fighter. Mastering those means you can play most Japanese 2D and 3D fighting games because many of them are very similar.

I think getting over the intial execution barrier will help you with Other Fighting Games but beyond that I doubt any other skills are going to transfer because many of those game are different.
Tekken, DoA and VF are all completely different monsters just as much as Street Fighter, BlazBlue and Mortal Kombat.
Learning each one those is going to be like Starting All over Again from square one.
@Lulu_Lulu: Even learning advanced techniques is not all that steep of a learning curve as long as there are tutorials. The basics of fighting games are usually similar enough that the differences are not so great that I, with fighting game experience, feel like a total beginner.

Every now and then. My first fighting game back in the early 90's was Mortal Kombat Arcade and from there, I got used to remembering combos and from there, the game help me to improve my skills from playing other fighting games. Also I know that I didn't include Super Smash Bros. on my list cause those games, I just pick random fighters but however in Melee, I always pick Mewtwo.

LoL... damn.... I was hoping to get some help performing it. I just Semi-Mastered Jacky's Flash Sword Kick (6K~H) and I thought I would try something harder..... especially since I like Eliot. :) I didn't know he was in the previous games.... alot of the new characters are Teens (and a few of the old ones too)

LoL... barely. I've been playing Mark of The Ninja this week (along side DOA) since I just purchased it but when I'm done with that I'l go back to playing DoA exclusively.
Yeah I don't get it either.... I just have to play this game all the time.
Basicly since February I've only played DoA, Trials and Mark of The Ninja.

LoL uhm not exactly... I only played Trials for a week or two... just like Mark of The Ninja.... DoA is the only one that I've actually been playing consistently.
Oh no wait... I also played Revelations 2 for a week aswell..... the first 2 days I finnished the game and the the other 4 days was Capcom trying to bait me with Raid Mode... luckily I managed to escape before they got me. Phew !!!

Where's the love for Johnny Cage? MK is the only fighting game I've play recently and I usually play Cage. Although I have been playing Cassie too lately. The last non MK fighting game I played was Capcom vs Marvel 3. I had Deadpool and Spiderman as mainstay of my team there, with the 3rd slot being a rotation of whoever I felt like trying out.
In all my fighting games, I tend to gravitate toward the fast characters, or the main characters to the story.
Like, P4AU, I play Yu or Yosuke mostly. Tekken 6 saw me using Jin a lot. Soulcalibur 2, I mained Talim. I can use most of the smash roster but I tend to really like the lighter characters like Greninja, Megaman, ect.
In Bloody Roar, I play as Long the Tiger.
