In time, you will all understand that fighting is futile, and you'll bent to her wishes. Since she has troubles to adapt, you will have to adapt...or perishes. (ghosts evolve little)
Cyric would have been an interesting second choice due to his impredictability.
Some bosses that I really liked (not that they were particularly villainous or anything) were the colossi from Shadow of the Colossus. They aren't necessarily "the ultimate villain" or anything. The game's atmospherics and grand scope created an emotional resonance that I really appreciated. These boss encounters were just plain great.
