Game consoles and games for them usually don't go on sale, not even for holidays. Get one now if your worried, the only thing that makes games cheaper is time.
As for your question, stores usually restock 2 or 3 times a week and every store is a different day at a different time. You would have to call and ask them to find out when.
I don't know what you mean by risky, but you'll get the best deals on Friday at 5am. Target has the best deal on the 360 (it comes with a $50 gift card). Other stores are giving away games but nothing better than Lego:Batman. If your willing to get a PS3 instead, Wal-Mart is giving away Infamous, Arkham Asylum, and The Dark Knight on Blu-Ray with the 120gig PS3 slim. Best Buy is giving LittleBigPlanet & Ratchet & Clank and Gamestop is doing LittleBigPlanet and The God of War Collection. Everything should still be in stock on Saturday as the systems are not the hot seller they were in the past. Hope this helps and Good Luck.
Yeah, the 360 isn't getting any great games in Black Friday bundles. The PS3, however, has Ratchet & Clank: A Crack in Time & LittleBigPlanet GOTY at Best Buy, LBP:GOTY & God of War Collection at Gamestop, and Infamous & Batman: Arkham Asylum at Walmart. So if you're going to get a 360, you may just want to spring for the extra $100 and get the MW2 bundle with the extra controller.
Edit: Just noticed the person above me said almost the exact same thing, heh.
