Gotta say - for me its Legend of Zelda Windwaker, Knights of the Old Republic and Skyrim. They highlight different aspects of the rpg genre - dialogue, combat and puzzle solving and all do it very well.

For JRPGs, some of my favorites are Knights in the Nightmare (has many RPG elements blended with other genres), Xenoblade Chronicles, Chrono Trigger, Dragon Quest IX and Final Fantasy VI. All for different reasons, but they're all really great.
For WRPGs, Deus Ex Human Revolution, Vampire The Masquerade: Bloodlines, Fallout 3 GOTY Edition, KOTOR 2 (while the lack of an ending sucks, I played it a lot more than the first one) and LISA The Painful (more of a JRPG but it was Western developed). All great, all for different reasons.

Persona 4 The Golden ( was amazing )
Bloodborne ... more of an action game to me
All the Pokémon
I enjoyed Fallout 3 but it wasn't amazing ... kind of a weak FPS

Dragon Age Origin
I think these are the only games I can say I can replay them in the future. Diablo 2/LOD have taken soo much of my time when i was younger. Quite honestly, I'd still probably be playing it if Diablo3 did not come out and the players moved away. With that said Diablo 3 sucks balls.
FFX I think had one of the best story. I played in when it came out, yet I know so much things about it still; like i had been playing it a week ago. "Listen to my story, this may be our last chance"
Dragon Age Origin was a game i liked for it's strategic combat and story that was a bit too much like Lord Of the Rings
Witcher 3, well to me that's my opinion of what a single-player open world RPG game should be.
FF12, still like the combat, difficulty, story, and world.
I like Vampire Bloodlines, The Dragon Age games, Fallout games, Mass Effect and Knights of the Old Republic.
I'm generally happy in the way the RPG side of things is moving in the games industry.
