Ok! Let's get started...
Firstly some of my favorite boss battles of all time are likely going to be from my favorite game of all time, can you guess what that is? :P
Naval Piranha

This bad boy was the end boss of world 3 (I believe I'm correct, how do I doubt myself? I don't think he was the end boss of the jungle level, that was Froggy... but World 3 I believe he was as it was the cavern filled world.) If I'm wrong, I will donate ten kittens to the next poster.
Well for me, the reason I loved this boss so much was for a few reasons.
1. Piranha plants in the game already are just deadly! This towering behemoth is just scary! At least when I was young! He was so intimidating, how could he not be cool looking?
2. Some of the best animation detail in the game. Seriously YI had some of the best looking sprites on the SNES bar none, and this guy moved in just such a fluid and deadly pattern, I just couldn't help but be awed by it. :)
3. Just a lot of fun to battle. :D
Up next we have
Tap Tap the Red Nose

Why was this boss so awesome? Well this was one boss who didn't die out in three hits. He was one of the most challenging bosses in the game, and he was a MID BOSS. Mid boss of world 6 this guy here was all business.
His devilish grin as he hopped about, the blank stare across his face when you smack him with an egg and seeing him flip back when you hit him. This guy was also HUGE in the small room you had to fight him in. The only way to defeat this armored beast was to break the ground beneath you and send him into the pit of lava below.
Of course, you are trying to not get in the lava yourself, but he bounces around the place and there are many rooms for error if you aren't careful and want that perfect score too. One great mid boss who could have been the end world boss, but regardless still lots of fun. :D
Baby Bowser

Of course, how could I forget him? A wonderful end boss to the game, even though you've fought Bowser many times before in every Mario game, this battle is still a shining moment.
It's a two round fare (aren't almost all end bosses this way?)and the first round he's just a little tyke. Hopping around, trying to knock Baby Mario off your saddle, then afterwards a Magikoopa may swoop in to try and keep the baby away from you. To take this tyke down, you need to ground pound and create a shockwave that damages the little guy. Miyamoto sure did bring lots of fancy special FXes into this game and pushed the hardware of the SNES more than any other game in many ways. Just seeing some of the "Morphmation" effects in the game like the shockwave to your pound attacks was neat.
Lastly the second round of any boss should be tougher, right? Well this round sure was. You are standing on one plane, you battle your foe who's in the background, a neat effect that for it's time was unmatched really... it created this grand scale of things and the battle just became harder and harder with each hit he took.
Baby Bowser is HUGE. Kamek's spell increases his size, and your dinky little eggs won't do jack to him. So what do you need? BIGGER EGGS! :D Battling this guy certainly changes a few things you are normally used to...
your Aiming has to include lobbing instead of the straight away aim like your smaller eggs. You have to deal with smaller tiny platforms to hop across all while dodging rocks and fireballs from this overgrown lizard. Not to mention each time you strike the guy he dashes up to you and if he reaches you, it's Game Over. Every time during the battle he takes a few small strides towards you, but with an egg splat in the face, he rushes to you and hopes to end your game quicker, making every egg strike after that much more important.
