Wii is more of a competitive system rather than a co-operative system. If you like flight simulators you should try Blazing Angels. It has 2 player co-op mini-games although the game is underappreciated and many people hate it. You should wait until the quarter 1 of 2008 and you'll have loads of co-operative games coming out.
Lego Star Wars will have co-op when it releases on Nov. 6th.
It may not be online like the 360 or PS3 versions, but it doesn't matter. You'll have a blast going through the complete star wars saga with your friends. Trust me, you will spend a lot of time collecting nuts and bolts and lego pieces.
mario galaxy is gonna have some fun co-op. one player controls mario, and the other player can control the obstacles, can freeze them, and trigger stuff.
There are no current Wii games I know of that have good co-op,but if you're willing to look for it,get The Legend of Zelda: Four Swords Adventures for the GC.You need a GBA (SP) for each person,and a wire to connect each GBA to the Wii,and you have to stay close to the screen (a short cable,I might add),but it's worth it.One of the best co-op experiences you can have.It is a tad pricey,though.

YES!!!1 also if you're going to bother with all of that then you might as well get FFCC for GC too since it has the GBAs and links and what not.
