Donkey Kong Country Returns, Epic Mickey, Punch-Out!!, Super Smash Bros. Brawl, and GoldenEye 007 are some of the best and my personal favorites right now.

Final Fantasy Crystal Chronicles the Crystal Bearers
The Resident Evil Chronicles games
Brawl (it's overrated, but it's still a great game.)
Tatsunoko vs. Capcom (I haven't played much, but what I've played was fun.)

I'm going to second FF: the Crystal Bearers. It is a flying shame that the game got so many 'meh' scores - it is a lot of fun. And the comment about mini-games was a misnomer: they are usually there to make cut scenes interactive rather than just sitting there watching a chase scene or some such. I just finished Fragile and thought it was REALLY memorable. It does have its flaws, but the experience as a whole made it worthwhile. I also had fun with Sky Crawlers.

I don't have a whole lot of games for the Wii since it stays at home and I've been at school. But Twilight Princess was a lot of fun as was the force unleashed if you're a star wars fan. But the new one is out anyway. Monster Hunter Tri absolutely consumed my life over my last summer break. I highly recommend that game if you like punishing big monsters and upgrading weapons/armor and so forth. It's especially fun and borderline addictive online.

Besides the obvious ones, Silent Hill: Shattered Memories and Little King's Story. These two games are seriously amazing and never got the praise that they deserved/deserve.
