The weapons you just have to spot while you play through each chapter. What will help you is trying to destroy as much as possible. There are secret items EVERYWHERE!

also this may sound stupid but make sure you arent just finding them but picking them up with.....z? i believe
So, I guess you're missing the Handcannon and Anti-Tank Rocket Launcher?
[spoiler] You can find the Handcannon while playing as HUNK in The 4th Survivor (shoot down a certain set of doors on the 2nd half to access the room it's in) and the Anti-Tank Rocket Launcher while playing as Wesker in Dark Legacy 2 (in the computer room; should be in plain sight). [/spoiler]
