I use a projector and have all of my av equipment behind my seating position. Because of the Wii's motion sensing capabilities, does the console/ sensor bar need to be in front of you?

No, they dont need to be infront of you. They can be anywhere, as long as you point the controller towards that direction

The sensor bar needs to be in front of you, not the console.

Or just get two normal TV remote, space them apart a bit, and keep the front light on As long as you have two IR sources, be it candles (yes, candles), official sensor bars, two TV remote, and they are in front of you, you can play it anyway you want.

That is correct, but the sensor bar cord isn't longer than... 3 meters, perhaps?
