it won't just be for sword fighting imo. They'll most likely create new items that require "motion gestures" to use. Or even have the game based off of an item that will implement it into the story.
Think about items like this.....
OoT-had the orcarina that helped solve puzzles, transported you, etc.
MM- had the masks that game revolved around along with your musical instruments (that was influenced from OoT)
WW- had....well the windwaker to basically do the same thing as the previous items.
TP- was a bit different because the game's main ITEM became a character, but still followed suit so to say.
Zelda Wii will most likely have something the game is based around that will require the use of M+ along with combat, puzzles, item use, etc.

They'll take it well beyond swordplay. There will no doubt be several brand new items (and several old/slightly modified ones ie Hookshot - Clawshot) that will make use of the greater precision. As for the swordplay itself, I'm not sure how they'd implement true 1:1 control without going into some sort of over-the-shoulder view or.... (gasp) 1st person view. It's all well and good to say "Thay shood make Linkz sored swing teh samez as my arm!" but it would be difficult to find the perfect camera view to make it happen and feel natural - especially without a second analogue stick for camera control... I'm not sure how 1:1 sword swipes would work with Link running towards the screen (if you catch my drift).
That being said, people were skeptical about how camera etc would work with the round worlds/gravity system in Super Mario Galaxy, and that turned out almost perfectly.
I'm sure that Nintendo have thought of all this plus much more, and will wow us with the genius way the game is created. I've got high hopes for this one!
