Well, improved graphics, WiiSpeak support for online multiplayer, more dangerous creatures, tighter controls, and more environments to explore. There might be more, but thats all I can think of.

Better Graphics
Wii Speak Support. You can still only go diving with one friend but you don't need to use the underwater pen to write messages,but it could still be an option.
You can get attacked by sharks and other creatures this time around. You also get a stun gun to zap them.
You get to explore different areas around the world, rather than just an enclosed area like in the first one. I think there's 7-8 different world locations.
For what wasn't mentioned,
You're not just limited to walking around on your boat as the main hub area. This time there's a big island where you can interact with different people.
You still get to have a giant aquarium that you can populate with whatever sea creatures you encounter, but this time you also get an area like a zoo. It's just like the aquarium but instead it's for all the different wild life you encounter like penguins, birds, polar bears etc.
Youget money for the treasure you find this timearound, which you can use to purchase new scuba equipment and other stuff. I think there's double the amount of treasure that there was in thefirst game.
The fish encyclopedia has more than double the amount also, in the first one there was only about 40 pages, this time I think there's over 80.
There's also going to be a completely new soundtrack.
This game's going to be awesome. I'm actually looking forward to it more than Super Mario Galaxy 2.
