I'm considering buying a Wii but have a silly question. When you are playing a football game such as Madden or NCAA can you use the controller as if you were playing an Xbox 360 game or do you have to use the motion sensing capabilities?

For Madden, it's motions.

For Tecmo Bowl, we don't know yet since it just has been announced.

For games like Madden you do have to use the motion controls, but its not that much movement at all, its just a flip of the wrist. I am not sure for up coming titles like NCAA or Tecmo Bowl. But I am sure you can use the classic controller for Madden.
