I know I read somewhere about some televisions that support component connections, yet do not support 480P. This was a good while ago and I can't find the proper information.
TC, if you still have your composite cables, I suggest you plug that in, set it back to interlaced and then you can go back to component if need be.

Actually, this exact thing happened to my brother a few months ago.
We fixed it simply by some trial and error and a little guesswork. We navigated through the options to turn the resolution back to 480i. Read the blog entry I linked to above for more detail, if you need it.
Changing the cables to composite won't work. The Wii automatically defaults to 480i when it detects composite cables, and it remembers the previous setting when it detects component cables. So you must change the setting to 480i using component cables for it to recognize it, otherwise it'll just default back to 480p when you use component cables again.
