The Guitar isn't just a plastic shell. There is a good bit of wiring that goes into it if not a complete board. Also, I'm wure that the area for the wiimote input has some sort of twisting device or spring loaded something so that the connection can be made between the remote and the guitar AND keep it secure in the guitar during more animated sessions. The last thing Nintendo wants is more wiimotes flying across living rooms.
The Balance Board is also a hefty piece of hardware for what it does as well as being the first to do what it does. The price is going to be bigger because the R&D involved to put something like this out. WiiFit might not be as big as some full titles, but it sounds like there is a lot there. Even saying $45 Balance Board and $25 for the game itself seems very reasonable to me.
I don't know much about the Kart steering wheel, but it doesn't look big enough to be the shell that has been going around. I imagine that is going to have some electrical work in it as well. Again, somewhat new product with R&D involved.
I think that you'll find that these prices are priceholders that are, more or less, right on the money. I believe it and support it. You aren't just getting great games so don't think that something about this game breaks the mold and is going to drive up the cost of Wii products.
