I thought Portrait of Ruin was boring and Order of Ecclesia took out the exploration, one of the things I liked with Dawn of Sorrow. The others weren't even close to as good as DoS, imo. If you want only one, definitely get DoS.
All the DS Castlevanias are pretty much just as good in my opinion, of course they all have their pros and cons. Might I also suggest Shantae: Risky's Revenge?
New Super Mario Brothers, Kirby Super Star Ultra, the Castlevania trilogy... All excellent and fun games.
For Castlevania, you don't really need to know the stories of any previous games, and this is the order of difficulty, from easiest to hardest. (IMO of course.)

OoE is very challenging, moreso than many other games released recently. Dawn of Sorrow is a little challenging, but not too bad. PoR is probably the easiest aside from a few bosses. All are great games.
I thought Mario and Luigi: Bowser's Inside Story was a very underrated game. It was more of an RPG, but it's got a good blend of 2d sidescrolling in it as well as the RPG elements. Definitely worth a look.
