Well, excessive use of profanity is one of the reasons why I used to turn the volume down when I played GTA: SA. There is just something about hearing constant swarms of "F" bombs and the likes that is off putting for some people.Shooting + knifing people is ok but language is bad?

There is strong language but its very rare. There is less swearing in MW than in WaW.

I see your viewpoint, and that's perfectly reasonable. However, in GTA: SA's case, it was a normal part of the culture that was being portrayed. It might have been a little stereotypical, but in every other sense, accurate.
