Umm... press the home button and it should appear and if not disconnect the wii-mote from the guitar, point it at the screen, and reconnect.
This happened to me when I played it coop once, I had to start the game over completely and that seemed to help, if that doesn't work, try resyncing the remotes, or clicking your heels together three times and wishing for it to work.
