Does the wii u game encompass the 3 games that came before it(DS, WII and 3ds), in terms of gameplay elements?
So if I was just to play the Wii U version I wouldn't be missing out on anything?

They are ALL one in the same. Nothing remotely significant stands out about either of them. It's the same pathetically rehashed and remedial platforming game play, audio with different instruments, and archaic "Your princess is in another castle!" Mario game "story". This is THE series of games that defines getting milked more than a cow's udders.
So if I was just to play the Wii U version I wouldn't be missing out on anything?
The Wii U version is the definitive version, however. It basically takes the extremely minimal progression, if any, from the other NSMB games and wraps it up into the most visually impressive NSMB game with HD paint. So, yes; if you're to "invest" in a NSMB game, the Wii U one is the one to get.
They all still suffer from the same old Mario clichés anyway - from whoring the Super Leaf/Tanooki Suit, to the usual classic Mario game nods here and there. Basically, don't expect anything to truly be "new". As for missing out on anything with the Wii U version, you're not. It's basically a play-by-play summation of the same remixed and stale formula you would find in the other NSMB games.
Unfortunately, each game is the same. I bought the DS version first and was pretty excited about what I was playing. I bought the Wii version to play with friends on the big screen but was disappointed that it didn't really bring anything new to the table. The differences have already been mentioned here by other people so, I won't get into it. The only "real treat" you get is seeing and playing classic Super Mario with upgraded graphics which look really nice, that's not enough to make me buy each entry of the franchise though. All I know is that I'll most likely be skipping the Wii U and Luigi versions.
They're all pretty much the same, however, if you're wanting to play it, I recommend waiting for Mario Kart 8, as you have the option for a free copy of NSMB with the purchase. Instead of paying 60$ for one game now, why not wait a few weeks and pay 60$ for two?

Here is the story for all NSMB games:
New! Super Mario Bros. - Mario and Peach are going out to walk. Then, a cloud of lightning comes and tries to destroy the castle. Mario goes to help the castle, but Peach is left stranded. Bowser JR comes out and then kidnaps her. Now you just have to go through 8 worlds to get her back.
NEW! Super Mario Bros. Wii - Mario, Luigi, Blue Toad, and Yellow Toad are all invited to go to Peach's castle for her birthday. A giant cake mysteriously appears and all seven Koopalings followed by Bowser JR come out and use the cake to kidnap her. They then escape the castle and fly back to their evil base with their air-ship.
NEW! Super Mario Bros. 2 - Mario and Luigi go out and use their Super Leafs to go coin hunting in the sky. While Peach is watching them fly away, she goes back to the castle when she suddenyl gets ambushed! They come to the rescue but too late, the Koopalings have already kidnapped Peach with their Clown Car and have flew away.
NEW! Super Mario Bros. U - Mario, Luigi, Blue Toad, and Yellow Toad go to Peach's Castle for a tea party. Then they hear cannonballs hitting the castle. A large horde of eight airships come and claim the castle as theirs, but not before flinging the heros into another part of the world.
Here are the differences between the games:
New! Super Mario Bros. - Crappy 64-Bit graphics, low quality sound, good soundtrack, levels use modern ideas for old design, basic power-ups, monster bosses.
NEW! Super Mario Bros. Wii - Better 480 p SD graphics, better soundtrack, good level design, unique power-ups, newer map style, Koopaling bosses.
NEW! Super Mario Bros. 2 - Okay 128-Bit graphics, cloned soundtrack of DS version, cloned levels of DS version, cloned power-ups from 3D land, huge coin gimmick.
NEW! Super Mario Bros. U - Amazing 1080 p HD graphics, cloned but remixed soundtrack, cloned levls of Wii version, few unique power-ups, great map world.
